One of my favorite fast food restaurants is Rubios… Their tacos are delicious, and I love the Chicken Especial Burritos! I was craving one of these so I decided to try to make one at home. Here is my version of a Burrito Especial, which is pretty darn delicious if I do say so myself!
This recipe makes 2 burritos!
-1 cup sliced grilled chicken
-shredded mozzarella cheese
-chipotle cream sauce
-1/2 cup cooked rice (I used minute rice for simplicity)
-rinsed & drained black beans
-flour burrito tortillas
this was for 1 package of chicken thigh filets
-1 T olive oil
-~2 T lime juice
-1/2 t cumin
-1/2 t onion powder
-1/2 t paprika
-1/2 t TJ’s Chile Lime Seasoning (this is just chili powder & lime)
-1 t garlic pepper (my holy grail seasoning)
Chipotle Cream Sauce:
(recipe from food.com…I used about 3 adobo chili peppers! Taste as you add them for desired spice level)
-rotel tomatoes (used about 1/3 of a can)
-1 T diced red onion
-fresh cilantro ~ 1 T
Now that all our ingredients are cooked we can compile the burritos! If you are lacking time or just looking to simplify this recipe as much as possible, get a rotisserie chicken and chop it up! This will still produce tons of flavor and cut down some of the cooking time so you can get to the eating faster 😉
Compiling and folding burritos is somewhat of an art form. I started with a smear of chipotle sauce (add lots of this. seriously.), guacamole next, then rice and chicken. Don’t overstuff your burrito otherwise it will be hard to roll, or the tortilla will rip. I find that microwaving my tortillas covered with a damp paper towel for about 15 seconds before working with them makes them slightly more pliable. If you want this recipe to be simplified even more, I have tried Trader Joe’s guacamole to-go packs and they are really good! They now make them in individual sized bags so you can easily just use what you need and save the rest for later.
Next add some black beans, some more of that heavenly chipotle cream sauce, and some mozzarella cheese. I never said these burritos were healthy 😉
Roll those babies up and take a bite! Oh. my. goodness. These were so good. The real Rubio’s chicken especial burritos have lettuce, but I left that out so I could make an extra burrito for leftovers sans wilty lettuce.
